Ingredients

1 package (16 ounces) ground chorizo sausage, cooked and crumbled*
- 2 tablespoons of butter
- 1-pound Campanelli pasta, cooked according to package directions

- 1/3 cup of flour

1 tablespoon Tajin® Classico

2 Teaspoons Tabasco® hot sauce
- 2 cans (10 ounces each) diced tomatoes with hatch green chilies, drained
- 5 cups of whole milk
- 1 package (8 ounces) cream cheese, cubed

5 cups of shredded Cooper® Sharp White American cheese, divided
- 3 tablespoons of butter
- 1/2 cup Panko breadcrumbs
- 1-1/2 teaspoons Tajin® Classico

fresh minced cilantro

Directions
In a saucepan, melt butter; add the flour whisk until smooth. Slowly add the milk; bring it to a boil. Add cream cheese, 4 cups Cooper® Sharp cheese, Tajin® and Tabasco®. Cook and stir until smooth, season with salt.
In a large bowl, combine the pasta, chorizo, hatch green chilies and tomatoes and Cooper® cheese sauce; stir to combine. Transfer to a greased 13-inch x 9-inch baking dish.
In a bowl, combine the butter, breadcrumbs and Tajin®. Sprinkle over mac n cheese with the remaining Cooper® cheese. Bake at 325°F for 20-25 minutes or until breadcrumbs are golden brown. Sprinkle with cilantro.
