Ingredients
- 1 pound elbow macaroni, cooked according to package directions
- ¼ cup butter
- ¼ cup flour
- 3 cups half and half

4 cups of shredded Cooper® Sharp Yellow American cheese

1 pound bacon, cooked and crumbled*
- 3 garlic cloves, minced
- 1 jar (16 ounces) pickled tamed jalapenos, chopped reserve brine
- 1/2 cup brine from pickled jalapenos
- 1 package (8 ounces) cream cheese, cubed

cayenne pepper to taste

Tabasco® hot sauce to taste
- 6 tablespoons of butter, melted
- 1 cup Panko breadcrumbs

garlic salt to taste

25 jalapenos, if making poppers
Directions
- In a saucepan, melt the butter; add the garlic and cook until fragrant. Add the flour, and whisk until smooth. Slowly add the half and half; bring to a boil for 2 minutes. Add the cream cheese, cook until smooth.
- Add the brine, peppers, bacon, cayenne and tabasco®. Toss with the macaroni and spoon into a greased 13-inch x 9-inch baking dish.
In a bowl, combine the butter, panko, garlic salt and cayenne. Sprinkle on mac n cheese, sprinkle with additional Cooper® cheese, if desired.
Bake at 350°F for 25 minutes or until golden brown.
If making poppers:
- Prepare half a batch of mac and cheese as directed above.
- Cut 25 jalapenos in half lengthwise; scoop out seeds.
- Fill with mac and cheese; bake at 350°F for 10-20 minutes or until heated through and peppers are crisp-tender.
