Ingredients

1 pound ground beef*

1 packet taco seasoning
- 6 street size flour tortillas
- ¼ cup butter, softened

½ cup each shredded Cooper® Sharp Cheeses – Black Pepper, White and/or Yellow (or hand torn slices)
- 6 slices of Cooper® Sharp Cheese – any flavor
-
Fillings of choice, sliced tomatoes, pickled red onions, sauteed onions and jalapenos, roasted corn, taco sauce, pickled jalapenos, sriracha sauce
- Optional, shredded lettuce, diced tomatos and prepared Spicy White Queso Dip Recipe - It Will Make You Blush – Cooper Cheese
Directions
- In a bowl combine the beef and taco seasoning; form into 3 patties.
- Grill or fry in skillet until desired doneness. Add 2 slices of cheese to each burger patty in an "X" crissed-crossed pattern. Cover skillet until cheese is melted. Place cheeseburgers on an oven-safe dish and set aside in an oven on "keep warm" setting.
- Prepare each quesadilla by buttering one side of each tortilla. Place one tortilla buttered-side down in a medium heat skillet. Add one-third of your hand-torn Cooper® Sharp cheese and your desired filling. Top with second tortilla, buttered-side up. Once cheese starts to melt, flip the tortillas carefully and continue to toast until browned.
- Start to build each burger by placing one quesadilla on a plate, spread a dollop of prepared Spicy White Queso Dip Recipe - It Will Make You Blush – Cooper Cheese. Add cheeseburger and top with other prepared toppings of your choice. Cover with remaining quesadilla. Repeat for the other 2 quesadilla burgers.
- Serve with taco sauce or sriracha sauce, shredded lettuce and diced tomatoes.
