Ingredients

1 pound chicken breasts, sliced*
- ¾ cup olive oil
- ¼ cup white wine vinegar
- 1 teaspoon garlic powder
- 2 teaspoons Italian Seasoning
- ½ teaspoon onion powder
- ½ teaspoon crushed red pepper
- ½ teaspoon salt
- 1 medium yellow onion, sliced
- 2 green bell pepper, sliced
- 1 cup shredded Cooper® White cheese
- Fresh minced parsley
Directions
- In a bowl, prepare a marinade by combining the olive oil, vinegar, garlic powder, basil, oregano, onion powder, crushed red pepper and salt; whisk to combine.
- Place chicken in a resealable plastic bag, add 2/3 of the marinade. Place vegetables in another resealable plastic bag, add remaining marinade. Marinate for 30 minutes.
- Drain chicken and vegetables, place on baking sheet
- Bake at 425°F for 15-20 minutes or until chicken is no longer pink. Sprinkle with Cooper® cheese during the last 5 minutes of baking. Sprinkle with parsley, if desired. Serve with toasted buns, if desired.
