Ingredients

1-1/2 cups chopped left over prime rib or steak*
- 1 small onion, sliced
- 2 tablespoons vegetable oil

1 -1/2 cups shredded Cooper® White Cheese

salt and pepper to taste

soy sauce to taste
- 10 egg roll wrappers
- 1 cup sour cream or Mexican Crema
- ¼ cup mashed avocado
- 1-2 teaspoons of wasabi paste
- 1 teaspoon rice vinegar
Wasabi Crema
Directions
In a skillet, sauté the peppers and onion in oil. Cook and stir until crisp tender; add the beef season with salt, pepper and soy sauce. Fold in the Cooper® cheese.
- Fill and roll in egg roll wrappers. Deep fry for 2-3 minutes or until golden brown.
- In a bowl, combine the sour cream, avocado, wasabi and rice vinegar. Serve with egg rolls.
