Ingredients
- 2 tablespoons oil
- 1 small onion, sliced
- ½ large green pepper, halved and sliced

½ pound chopped prime rib*
- 12 slices Cooper® Sharp Yellow or White American cheese.

8 eggs, beaten*

4 jalapeno cheddar bagels, toasted

roasted garlic aioli

salt and pepper to taste
Directions
- Heat oil in a skillet, add the peppers and onions, cook and stir until crisp-tender. Add the prime rib, season with salt and pepper. Cook just until heated through. Add 3 slices of Cooper® cheese, chopping into the meat to incorporate.
- In an 8-inch nonstick skillet, make 4 omelets; layer a slice of Cooper® cheese on top of each omelet. Fold into quarters.
- Spread aioli on bottom of bagel top.
- Place omelets on the bottom of each bagel. Top with cheesy meat and pepper mixture, 1 slice of Cooper® cheese and bagel top.
- Bake at 350°F for 1-2 minutes or until Cooper® cheese is melted.
