Every summer cookout deserves a few good sides. Something light and refreshing to balance things out. And you can’t get much more refreshing than this Cooper® Cheese Fruit and Nut Salad. Blackberries, blueberries, raspberries, and peaches on a bed of greens. A little pecan crunch, tangy honey mustard dressing, all perfectly complemented by the sharpness of Cooper® cheese. It’s basically summer in a bowl.

Ingredients

1/4 cup honey

2 tablespoons Dijon mustard

2 tablespoons apple cider vinegar

½ tsp black pepper

½ tsp onion powder

1 bag fresh spinach
-
1 bag mixed greens
-
1 6-ounce container blackberries, washed

1 6-ounce container blueberries, washed
-
1 6-ounce container raspberries, washed
-
1-2 peaches, washed and sliced

1 cup Cooper® Sharp White or Yellow cheese, add finely cubed, or shredded

4 ounces pecan halves
Directions
Prepare dressing by combining honey, Dijon mustard, apple cider vinegar, black pepper, and onion powder. Mix well and refrigerate until ready for use.
Wash spinach and mixed greens and remove excess water. Chop spinach and mixed greens into medium-sized pieces and mix together in a bowl.
Sprinkle pecans, sliced peaches, and assorted berries over greens. Sprinkle Cooper® Sharp cheese on top.
Top with honey mustard dressing and enjoy!
Recipe Note
Dressing can be prepared in advance, but shake/stir before applying to salad.
